Crepes with Pumpkin Filling

For your crepe:
1/4 cup egg whites
1 scoop vanilla protein powder
sprinkle of pumpkin pie spice or cinnamon
packet of sweetner

Cook like you would a pancake. After you flip and the one side is done take the prepared filling below and spread onto one half of the crepe, cover so filling warms. When it is totally cooked fold in half and serve!

For your pumpkin filling:
1/4 cup pure canned pumpkin
1/4 cup ricotta cheese
puree these ingredients in blender-- add a very tiny amount of vanilla extract and 2 packets sweetner of choice if desired

Does not even need syrup!
