After eating the Corn-- Kidney Bean Salad in Jamaica I was craving it again. I found that the importance of this recipe is marinating.
1 can kidney beans
1 can corn kernels (sweet)
2 bell peppers (green and red or just one color) chopped
1 red onion chopped
sweetner of choice
Drain the beans and corn kernels, chop the peppers and onions mix well. Add a little salt and pepper, mix again. Set aside. Make a dressing of 4 tablespoons vinegar, 4 tablespoons olive oil and sweetner to desired sweetness. Add dressing to salad as well if cilantro if desired. Cover and refridgerate overnight. Take out and stir again. Enjoy!
